Blue Granite is a one man, small batch roastery in Lexington, South Carolina. It exists because someone who spent a career keeping industrial refrigeration honest could not leave a thermal process alone once he understood it.

The short version

Who is behind it

Sean O'Brien. Air Force, then facilities, then this.

Ten years in the United States Air Force as an aerospace ground equipment technician, keeping the support gear behind B-52 and KC-135 aircraft running. Then three decades in corporate facilities management, most of it responsible for large industrial ammonia refrigeration, building systems and capital projects across a multi state portfolio. Certified Facility Manager through IFMA.

None of that is coffee experience. All of it is process experience, and roasting turns out to be a process problem wearing an apron.

If you can hold a refrigerated warehouse within a degree, you can hold a roast profile within a few seconds. The instincts transfer completely.

What the day job taught

Four habits that came straight across.

Everything gets logged

In facilities, an undocumented repair is a repair that gets made again next year. Same here. Every batch has a written profile behind it, and a roast we cannot reproduce does not go in a bag.

One variable at a time

Change three settings and improve the result and you have learned nothing you can use. Dial-ins here move one input per batch, cupped against the batch before it.

Thermal systems behave

Heat transfer, airflow, mass, residual energy after shutdown. A drum roaster is a small, fast version of problems that took thirty years to get boring.

Nobody is impressed by excuses

A freezer either holds temperature or it does not. A cup either tastes right or it does not. The standard is the outcome, not the effort.

How this actually runs

Small enough to mean these rather than print them.

Roasted to order

Coffee is roasted against real orders, not against a forecast. Nothing sits in a warehouse waiting to be found, because there is no warehouse.

The date goes on the bag

Roasted on, not best by. It is the single most useful number on any bag of coffee and most of the industry still will not print it.

Whole bean only

Grinding starts a clock that runs in days instead of weeks. Selling pre ground would undo most of what the roast date is for.

We name the farm

Origin, producer, variety and process go on the label. Roast colour alone tells you almost nothing about what is in the cup.

Dark is a choice, not a cover

Roasting dark hides defects. When we roast dark it is because the coffee is built for it, not because something went wrong upstream.

We will tell you if it is not ready

A coffee that has not finished dial-in does not go on the shelf with a hopeful description. It waits.

The honest scale

This is a craft, not an empire.

Blue Granite is home based and deliberately small. It is run alongside a full time career, which means output is limited and always will be. That is a feature. It is the reason every batch gets attention that volume would make impossible.

If a coffee sells out, it sells out. We would rather run short than roast ahead and sell you something three weeks past its best.
